Hey Jean!

This is an excellent question. We don’t know an exact percentage in large part because it varies so widely between commodities. Some items like apples and carrots have multiple, well-established processing markets, while others like eggplants or Brussels sprouts have little or no processing outcomes. We encourage you to read our blog post all about what farms can and cannot sell to processors here: https://medium.com/@imperfectproduce/do-all-ugly-tomatoes-really-end-up-in-salsa-c00bd8202ef3

This post really explores the economic realities of processing fruits and veggies from a farmers perspectives and a lot of our readers and customers found it eye-opening. We hope you enjoy it!
